Berry Breaky Muffins
Ingredients
- 1 cup milk
- 1 cup oats + 2 Tbsp
- 1 ¼ cups plain flour
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp cinnamon
- 115 g butter melted
- 1/3 cup honey
- 1 egg
- 1 tsp vanilla
- 1 cup frozen mixed berries
Instructions
- Preheat the oven to 160C and line a 12-capacity muffin tray with cupcake liners.
- Combine 1 cup oats and milk in a bowl and allow to soak for 15mins. Mix in the butter, honey, egg and vanilla until just combined. Sift in plain flour, baking powder, bi carb soda and cinnamon. Fold in with a wooden spoon until just combined. Finally stir through the mixed berries
- Divide the mixture amongst the muffin trays. Sprinkle over the remaining 2 Tbsp oats. Bake in the oven for 20-25min or until a skewers inserted comes out clean.
