- 1 Red capsicum seeds removes and slice into rounds
- 2 eggs
- 1 Tbsp Extra Virgin Olive Oil
- Salt and pepper to taste
- Heat oil in a large fry pan. Place red capsicum round in the pan. Cook for 1min and then flip over. Crack an egg into the middle of each round and cook on high heat for 2mins until cooked. If you don’t like runny eggs flip over for 30s!
