Choc Chip Oat Muffins
Ingredients
- 1 cup Rolled Oats
- 3/4 cup Milk of choice
- 1 cup Self Raising Flour
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 tsp Cinnamon
- 1/3 cup Brown Sugar
- 1 large Egg
- 1/4 cup Unsalted Butter Softened
- 2 tsp Vanilla extract
- 1 cup Chocolate chips
Instructions
- Line a muffin tray with liners and preheat oven to 180C
- Combine oats and milk in a bowl and allow oats to soften for 5 minutes or so
- In a large bowl, whisk the eggs and the sugar until a caramel colour appears
- Add the vanilla, and butter to the egg mix without letting hot butter cook the egg
- Add flour, oat mix, baking soda, salt and cinnamon to the bowl and mix well
- Fold in chocolate chips
- Distribute into muffin trays evenly and place in oven
- Cook for 15- 18 minutes - allow to cool before eating
