Chocolate Weet-bix Slice
Ingredients
- 3 Weetabix
- 1 cup desiccated coconut
- ¼ cup caster sugar
- 1 cup SR flour
- 2 Tbsp cacao
- 150 g butter melted
Icing:
- ¼ cup dark chocolate melts
- 2 Tbsp milk
- ¼ cup Greek yoghurt
- 3 Tbsp cocoa powder
Instructions
- Preheat the oven to 160C and line a square brownie tin with baking paper.
- Crush the Weetabix into a rough crumb in a large bowl and then add in the coconut, sugar, SR flour and cacao and stir to combine. Pour in the melted butter and then stir until well combined. Press the mixture into the prepared tin. Bake in the oven for 12mins.
- Allow to cool completely before icing.
- To prepare the icing, melt the choc chips in a small bowl in the microwave. Microwave it in 30s increments, stirring in between until it is melted and smooth. Allow to cool for 5mins and then stir in milk, Greek yoghurt and cocoa. Spread over the Weetabix slice. Cut slice into squares and serve.
