Crispy Fish Burger
Ingredients
- 4 Hoki fish fillets
- 2 Eggs whisked
- 1 cup Panko breadcrumbs
- 2 Tbsp Lemon zest
- 1 Tbsp Dill roughly chopped
- 100 g Tartare sauce
- 200 g packet Coleslaw mix
- 100 g Rocket
- 4 Fresh bread rolls
- 4 large potatoes cut into chips
- Spray Olive Oil
- Salt and Pepper to taste.
Instructions
- Preheat the oven to 180C. Spread the potatoes over a large baking tray and then spray lightly with olive oil and season with salt and pepper. Bake in the oven for 30mins.
- Combine the panko breadcrumbs in a bowl with lemon zest and dill. Dip the fish fillets in the eggs and then into the breadcrumbs to coat.
- Remove the potatoes from oven and push the potatoes to the edge of the tray. Position the fish in the middle of the chips. Spray lightly with olive and return to the oven for 15mins.
- Spread one side of the rolls with tartare sauce and top with slaw, fish, rocket and serve along side chips.
