DIY Loaded Mexican Chips
Ingredients
- 500 g Potatoes Cut into wedges
- 500 g sweet potatoes cut into wedges
- Spray Olive Oil
- Salt and pepper to taste
- 1 Tbsp Extra Virgin Olive Oil
- 500 g lean beef Mince optional
- 1 large Carrot grated
- 400 g Black beans
- 30 g taco spice mix
- ½ cup cheese grated
- 200 g Cherry tomatoes
- 1 Avocado peeled, seeded and diced
- Coriander to serve
- Sour cream or Greek yoghurt to serve
Instructions
- Preheat the oven to 200C. Toss the sweet potato and potato on a large baking tray. Spray lightly with olive oil and season with salt and pepper. Bake in the oven for 45min.
- Meanwhile, heat the olive oil in a large fry pan. Add the mince to the pan and cook on high heat until brown (about 5-7mins) then stir through the black beans, taco spice and ¼ cup water. Allow to simmer for 5mins.
- Remove the chips from the oven and top with mince and cheese, then return to the oven for 5mins or until brown.
- Meanwhile prepare the salsa. In a small bowl combine the red onion, cherry tomatoes, avocado. Top the loaded chips with salsa, coriander and sour cream to serve.
