This recipe has been passed down from my grandmother to my mother and now to my sister and I. We all LOVE baking it, 1. because it tastes heavenly but 2. mainly because it is the easiest one bowl cake you will ever make!!
I have switched out the caster sugar for Natvia to reduce calories and the fructose levels, but feel free to make it with caster sugar!
It makes a perfect bundt cake – or make it into 12 muffins and freeze for your lunches!
Apple Walnut Tea Cake

SERVES: 12
INGREDIENTS:
- 2 apples, cored and roughly chopped
- 1 cup Natvia (or 1 cup caster sugar)
- 1 ½ cups All Purpose Flour
- 1 tsp Bi Carb Soda
- 1 tsp Ground Cinnamon
- 1 tsp All Spice
- 1 cup walnuts, roughly chopped
- 125g butter, melted
- 1 egg
- ½ tsp vanilla

Prep TIME: 15mins
Cooking TIME: 45-50mins
Method:
Combine all of the ingredients in a bowl with a wooden spoon. Then pour mixture into a bundt tin. Cook for 45-50mins. Allow to cool completely then dust with icing sugar.
It is also perfect to make into muffins, just reduce cook time to 20-30mins depending on size.
