Healthier Chicken Nuggets
- 500 g Chicken Breast
- 1 zucchini
- 1 carrot
- 3/4 cup breadcrumbs
- 1 Tbsp dried oregano
- 1 egg
- 1 Tbsp chia seeds
- Preheat the oven to 180C. Line 1 baking tray with baking paper.
- Meanwhile prepare the nuggets. Add the zucchini and carrot to the bowl of a food processor and process to a fine crumb. Add the chicken breast and process until smooth. Then add the breadcrumbs, oregano, egg and chia seeds. Process until just combined.
- Lightly wet your hands, to prevent the mixture from sticking and form 1.5Tbsp of mixture into a ball and then press into the shape of a chicken nugget. Repeat until all mixture has been formed.
- Spread nuggets over the tray 1cm apart and bake in the oven for 20mins.
