Slow Cooker Mexican Pulled Chicken
Ingredients
- 1 Kg Chicken Thigh
- 1 Red onion finely diced
- 1 Tbsp Paprika
- 1 Tbsp Cumin
- 2 Tsp Coriander ground
- 1 Tbsp Garlic powder
- 1 Tbsp Onion powder
- 1 Tbsp Brown sugar
- ½ cup Chicken stock
- 400 g tin diced tomatoes
- To serve: yoghurt fresh coriander, Tortillas, avocado
Instructions
- Place the chicken thigh and red onion in the bowl of a slow cooker. Pour the spices, sugar, chicken stick and tomatoes over the chicken and then stir to coat. Cover and cook on high for 4hrs or low for 6hrs. Use two forks to shred the chicken. Season with salt and pepper to taste.
- Use the mix for tortillas, nachos or serve over rice.
