Veggie Loaded Bolognese
Ingredients
- 1 Tbsp Oil
- 1 onion
- 2 carrots
- 1 zucchini
- 2 celery
- 2 cloves garlic
- 500 g Lean beef mince
- 400 g lentils
- 3 x tins tomatoes
- 2 Tbsp Balsamic Vinegar
- 2 tsp mixed herbs
- 2 Tbsp tomato Paste
- 1 tsp sugar
- 1 beef stock cube
Instructions
- Preheat the oil in a large stock pot on a medium heat. Meanwhile place all the vegetables (onion, garlic, carrot, celery, zucchini) in a food processer and process to a fine mixture. If you don’t have a food processer grate all the vegetables by hand.
- Add the vegetables to the pot and then sauté for 5min to sweat the vegetables down. Add the mince and cook for a few minutes until brown. Add in the tomato paste, vinegar, mixed herbs, tinned tomatoes, sugar, stock cube and salt and pepper.
- Bring to a boil and then reduce to a simmer for at least 30mins. If possible, allow to cook on low heat for 2hrs, stirring occasionally.
