Veggie Loaded Bolognese

Ingredients

  • 1 Tbsp Oil
  • 1 onion
  • 2 carrots
  • 1 zucchini
  • 2 celery
  • 2 cloves garlic
  • 500 g Lean beef mince
  • 400 g lentils
  • 3 x tins tomatoes
  • 2 Tbsp Balsamic Vinegar
  • 2 tsp mixed herbs
  • 2 Tbsp tomato Paste
  • 1 tsp sugar
  • 1 beef stock cube

Instructions

  • Preheat the oil in a large stock pot on a medium heat. Meanwhile place all the vegetables (onion, garlic, carrot, celery, zucchini) in a food processer and process to a fine mixture. If you don’t have a food processer grate all the vegetables by hand.
  • Add the vegetables to the pot and then sauté for 5min to sweat the vegetables down. Add the mince and cook for a few minutes until brown. Add in the tomato paste, vinegar, mixed herbs, tinned tomatoes, sugar, stock cube and salt and pepper.
  • Bring to a boil and then reduce to a simmer for at least 30mins. If possible, allow to cook on low heat for 2hrs, stirring occasionally.
