Preheat the oil in a large stock pot on a medium heat. Meanwhile place all the vegetables (onion, garlic, carrot, celery, zucchini) in a food processer and process to a fine mixture. If you don’t have a food processer grate all the vegetables by hand.
Add the vegetables to the pot and then sauté for 5min to sweat the vegetables down. Add the mince and cook for a few minutes until brown. Add in the tomato paste, vinegar, mixed herbs, tinned tomatoes, sugar, stock cube and salt and pepper.
Bring to a boil and then reduce to a simmer for at least 30mins. If possible, allow to cook on low heat for 2hrs, stirring occasionally.
