Heat 1 Tbsp oil in a large saucepan on medium high heat. Add chicken to pan and cook for 5mins until slightly browned. Remove chicken from the pan and set aside.
Add remaining oil to the pan. Then sauté onion and garlic in the pan for 2-3mins until onion becomes translucent. Add both mustards, honey, cream and chicken stock. Season with salt and pepper. Bring to a boil and then reduce to a simmer. Finally add the chicken back in and simmer for 10mins.
Serving suggestions: Serve on pasta or mash potatoes along side green beans.
