Line a muffin tray with liners and preheat oven to 180C
Combine oats and milk in a bowl and allow oats to soften for 5 minutes or so
In a large bowl, whisk the eggs and the sugar until a caramel colour appears
Add the vanilla, and butter to the egg mix without letting hot butter cook the egg
Add flour, oat mix, baking soda, salt and cinnamon to the bowl and mix well
Fold in chocolate chips
Distribute into muffin trays evenly and place in oven
Cook for 15- 18 minutes - allow to cool before eating
