Choc Chip Oat Muffins

Chocolate Chip Muffins with Rolled Oats

Ingredients

  • 1 cup Rolled Oats
  • 3/4 cup Milk of choice
  • 1 cup Self Raising Flour
  • 1 tsp Baking Soda
  • 1/4 tsp Salt
  • 1/2 tsp Cinnamon
  • 1/3 cup Brown Sugar
  • 1 large Egg
  • 1/4 cup Unsalted Butter Softened
  • 2 tsp Vanilla extract
  • 1 cup Chocolate chips

Instructions

  • Line a muffin tray with liners and preheat oven to 180C
  • Combine oats and milk in a bowl and allow oats to soften for 5 minutes or so
  • In a large bowl, whisk the eggs and the sugar until a caramel colour appears
  • Add the vanilla, and butter to the egg mix without letting hot butter cook the egg
  • Add flour, oat mix, baking soda, salt and cinnamon to the bowl and mix well
  • Fold in chocolate chips
  • Distribute into muffin trays evenly and place in oven
  • Cook for 15- 18 minutes - allow to cool before eating
