Raspberry and Banana Bread

Raspberry, White Chocolate and Banana Loaf

Ingredients

  • 2 cups Self Raising Flour
  • 1/2 tsp Salt
  • 1/4 cup Brown Sugar
  • 1/4 cup Honey
  • 2 medium Bananas Ripe
  • 1 cup Frozen Raspberries
  • 1 cup White Choc Chips
  • 1/3 cup Olive Oil Extra Virgin
  • 2 Eggs

Instructions

  • Line a bread tin with baking paper and preheat oven to 180C
  • Mash one of the bananas and thinly slice the other to be used on the top of the bread
  • In a large bowl add all dry ingredients and combine
  • In another bowl, add all wet ingredients and stir until combined
  • Add in raspberries and chocolate chips and fold through the mixture
  • Pour mixture into bread tin and gently lay banan strips on top of the bread
  • Cook for 45-50 minutes - eat warm or freeze for up to 3 months

Notes

Use a tooth pick or a fork to check if the middle of the bread is cooked and not still runny. The fork will come out dry if it is cooked.
