Remove the seeds and peel the avocado. Put the avocado flesh, lime juice, garlic, Greek yoghurt and coriander into a food processor or blender. Blend on high for 1min until it is smooth and creamy. Pour the dip into a large bowl, season with salt and pepper and stir through the red onion and cherry tomatoes.
Serve with corn chips
Notes
to store dip place in an airtight container and cover the top of the dip with 1cm of water. Drain the water before serving.
