Creamy Avo Dip

Ingredients

  • 2 Avocado
  • Juice of half Lime
  • 2 cloves garlic crushed
  • 3 Tbsp Greek yoghurt
  • ¼ cup Coriander leaves
  • ¼ Red onion finely chopped
  • 100 g Cherry tomatoes quartered
  • 1 packet Corn chips

Instructions

  • Remove the seeds and peel the avocado. Put the avocado flesh, lime juice, garlic, Greek yoghurt and coriander into a food processor or blender. Blend on high for 1min until it is smooth and creamy. Pour the dip into a large bowl, season with salt and pepper and stir through the red onion and cherry tomatoes.
  • Serve with corn chips

Notes

to store dip place in an airtight container and cover the top of the dip with 1cm of water. Drain the water before serving.
